Ingredients

  • 1 onion

  • 1 tbsp tomato puree

  • 2 tins chopped tomato

  • 1 red pepper

  • 1 cauliflower

  • 1 clove garlic

  • 2 carrot

Method

  1. Grate carrots, cauliflower, red pepper, garlic and chop onion.
  2. Fry in oil until soft.
  3. Add tomatoes and puree and heat up then puree/blend and serve with pasta.

Handy Hint

Good served with wholemeal pasta shapes, grated cheese and chickpeas
