Potato with fenugreek leaves

Ingredients

  • 1 potato, diced (large)

  • 1 tsp turmeric

  • 1 green chilli

  • 1 bunch fenugreek leaves, washed and chopped

  • 2 onions, sliced

  • 1 tbsp curry leaves

  • 0.5 tsp ground coriander

  • 0.5 tsp chilli powder

  • 1 bunch fresh coriander, chopped (to garnish)

Method

  1. Heat the oil in a wok or pan and fry the curry leaves for 10 seconds.
  2. Add the onions and chillies together and fry until almost golden.
  3. Add the turmeric, coriander, chilli powder and a pinch of salt to the onions and chillies.
  4. Add the potatoes, cover and cook for about 5 minutes or until they are almost cooked through.
  5. Finally, add in the fenugreek leaves, cover and cook for a further 3-5 minutes.
  6. Garnish with a small amount of fresh chopped coriander, and serve with roti, chapati or naan.

Handy Hint

If serving to children/toddlers exclude the chilli powder and chillies, and reduce salt to little or none, and limit the oil.

    Fenugreek leaves have a very unique taste, it's also one of those dark, leafy vegetables! My daughter wasn't sure at first but after she tasted it she LOVES it! I made this for family before and they LOVED it! My daughter loves to help me with the most time consuming part - picking the leaves! - which makes time pass and is enjoyable!
