Lentil and vegetable soup

Ingredients

  • 2 tbsp oil

  • 2 potato, diced

  • 570ml vegetable stock

  • 1 large onion, diced

  • 200g sweetcorn, (from a tin)

  • 2 celery stick, diced

  • 4 tbsp red lentils

  • 1/2 swede, diced

  • 2 leeks, diced

  • 2 carrot, diced

  • 1/2 tsp chilli powder

Method

  1. Heat the oil in a large saucepan. Add all the vegetables apart from the sweetcorn and stir until softened.
  2. Add the lentils, the stock and season and simmer for 30 minutes.
  3. Blend until smooth, it's okay to still have a few lumps of veg.
  4. Add the sweetcorn.
  5. Serve.

Handy Hint

It sometimes sticks, so keep the heat low.
