  • 1 drop vanilla essence

  • 1 lime zested

  • 2 tbsp lime juice

  • 100g lean ham trimmed

  • 125ml low fat natural fromage frais or unsweetened yoghurt

  • 225 gs lean skinless cooked chicken

  • 1 clove garlic

  • 1 bunch parsley


<ol> <li>Dice the chicken and ham and place in a food processor.</li> <li>Add the parsley, lime rind, lime juice, garlic and process until finely minced.</li> <li>Transfer the mixture into a bowl and mix in the fromage frais and seasoning.</li> <li>Cover and leave to chill for 30 minutes.</li> <li>Serve with crispy bread and a green salad.</li> </ol>

Handy Hint

<p>You can also used other lean meat such as turkey, beef and pork. Or make it fishy by using prawns with tinned tuna.</p>
