4 frozen spinach cubes, chopped
1 tbsp garlic paste
- Melt a knob of butter in a frying pan, when it's bubbling add the spinach, garlic and a generous grinding of black pepper.
- Cover, turn the heat down a little and leave the spinach to melt.
- Meanwhile, beat the eggs in a bowl.
- When the spinach is melted tip the contents of the frying pan into the eggs and mix well.
- Return to the pan and scramble.
- Serve with toast.
