Green eggs (no ham)

  • 2 eggs

  • 4 frozen spinach cubes chopped

  • 1 tbsp garlic paste


  1. Melt a knob of butter in a frying pan, when it's bubbling add the spinach, garlic and a generous grinding of black pepper.
  2. Cover, turn the heat down a little and leave the spinach to melt.
  3. Meanwhile, beat the eggs in a bowl.
  4. When the spinach is melted tip the contents of the frying pan into the eggs and mix well.
  5. Return to the pan and scramble.
  6. Serve with toast.
