Ingredients

  • 1 fresh red chilli

  • 1 lemon

  • 2 tbsp capers

  • 1 fresh flat-leaf parsley

  • 2 fresh tuna steaks

  • 4 anchovies

  • 1 bunch of fresh basil leaves

  • 250g cherry tomatoes

  • 200g black olives

  • 2 cloves garlic

  • 2 tbsp Worcestershire sauce

Method

  1. Cut the tuna steaks into cubes.
  2. Finely chop the basil leaves and place in a bowl with two big lugs of olive oil. Add the juice and zest of a lemon. Season with salt and pepper. Marinade the tuna cubes in this mixture.
  3. Slowly melt the anchovies in a frying pan. When melted add the chopped garlic, chopped black olives, chopped chilli and the capers.
  4. Fry for a couple of minutes on a low heat. Add the tuna and marinade. Add all the cherry tomatoes (chopped finely). Fry and stir until the tuna is just cooked through (don't overcook so it goes tough). Add a splash of white wine while you fry.
  5. As you start frying the above boil a generous amount of spaghetti. Time it so sauce and pasta are ready at the same time.
  6. Mix the sauce into the pasta and toss. Add large handful of fresh chopped parsley and eat straight away.
