Sausage and courgette pasta

  • 1 tin chopped tomato

  • 2 courgette

  • 2 cloves garlic

  • 400g pasta

  • 8 sausages


  1. Grill the sausages and, once cooked, chop into chunks.
  2. Pop these into an oven dish with the tin of chopped tomatoes.
  3. Chop the garlic cloves into thin slivers and add to the dish.
  4. Give it all a good mix and pop in the oven on a medium heat for about 20 minutes.
  5. Meanwhile, cook the pasta and peel the courgettes into ribbons. A few minutes before the sausage dish is due out of the oven dry, fry the courgette ribbons.
  6. Drain the pasta and add this along with the courgette ribbons to the oven dish, stir and serve.

Handy Hint

Can also use chicken breast or veggie sausages as an alternative.

    This is a great recipe. My daughter will only eat pasta so it was great to find a new way of serving it
