Ingredients

  • 150g brown sugar

  • 2 tsp baking powder

  • 1/2 tsp salt

  • 1 tsp cinnamon

  • 300g flour

  • 1 tsp mixed spice

  • 1/2 tsp nutmeg

  • 2 eggs

  • 200g sultanas, or raisins

  • 150g butter

  • 100g walnuts, chopped

  • 4 apples, or pears

Method

  1. Preheat the oven to 180C.
  2. Melt the butter and allow to cool.
  3. Grate the apple into a bowl, add the sugar and butter and mix well.
  4. Add the egg and mix well.
  5. Sift all dry ingredients together, add to the bowl and mix well. Finally, fold in the fruits and the nuts.
  6. Pour into a prepared cake tin and bake for 45-60 minutes.
  7. Remove from the oven, allow to cool in the cake tin for 5 minutes and then place on a cooling rack.

    Brilliant; Needing to use the apple glut from my tree, I have used this to family applause. Because I have had to carve up some apples I have probably overcompensated with more, but it has been wonderfully soft and tasty .

    I peeled and chopped apples then added walnuts to decorate top before cooking. Friend said "best cake ever"!

    Easy and quick: this cake is made in a single bowl with no rubbing in and no need for a food processer. Because it's so moist, it doesn't crumble all over the carpet when the monkeys decide plates are a waste of time.
