Cheese, potato and sweetcorn pancakes

Ingredients

  • 1 tbsp olive oil

  • 1 tsp milk

  • 1 tbsp flour

  • 1 handful sweetcorn

  • 115g cheese, grated

  • 1 eggs, beaten

  • 1 large potatoes, peeled and grated

Method

  1. Blend the egg and milk together.
  2. Stir everything together in a bowl and add one tbsp flour and salt and pepper.
  3. Drop spoonfuls onto a greased, heated frying pan.
  4. Fry until light brown on each side.

    I made these wonderful pancakes from a gluten free coconut flour. It was amazing. I did need to use a few more eggs though. It tasted amazing. It was Tiana Coconut Flour. So healthy. The heath benefits are written on the pack. It is high in fibre and low in carbohydrates. Try it. Its fantastic. My kids swear by it. They want it for breakfast every weekend and I don't feel bad about giving it to them because I know its healthy and good for them. My neighbour gave me the recipe

    Absolutely delicious and very easy. Cooked on low for quite a while to ensure the potato was soft, so they had a beautiful golden crust, the recipe was bang-on. I would do these as a starter for a dinner party, they're that yummy. Thanks for the recipe :)

    I didn't put as much cheese in and don't see tge need for tge oil, but they were very quick and easy. And most importantly dd 4 and so did ds 9 months loved them. Re tge other comment about if it's cooked potatoe, no its not, maybe you had tge heat up too high so tge outside was brown before it was cooked through?

    Awesome!!! Was at a lose for what to do for tea but these were perfect! Ds1 cracked the egg, ds2 mixed in the milk and then they shared in adding and mixing the rest. Only adjustment we made was a little more flour and milk & ds1 doesn't like corn so we whizzed up some baby spinach with a little milk poured it in and made them green alien pancakes!
