Ingredients

  • 2 chicken breast, sliced into small strips

  • 1 tin coconut milk

  • 1 handful bamboo shoots

  • 1 tbsp fish sauce

  • 2 tbsp green thai curry paste

  • 1 sweet basil leaves

  • 1 handful sweet basil leaves

  • 1 handful baby corn

  • 1 handful lime leaves

  • 1 red chilli, sliced

Method

  1. Heat the curry paste in a pan.
  2. Add the coconut milk.
  3. Stir and heat to boiling.
  4. Add the chicken and boil until the chicken is coloured.
  5. Add the vegetables and leaves, chilli and fish sauce.
  6. Cook on a gentle heat for 40 minutes to 1 hour, stirring regularly.

Handy Hint

Serve with boiled rice.
