  • 175g self-raising flour

  • 100g icing sugar

  • 3 large egg beaten

  • 1 tsp baking powder

  • 40g desiccated coconut

  • 1 lime finely grated zest and juiced

  • 1 lime zested and juiced - for the icing

  • 250g condensed milk

  • 175g butter softened


<ol> <li>Grease and base line a 900g (2lb) loaf tin with baking parchment.</li> <li>Place all the cake ingredients (apart from the icing sugar and the zest and juice of the second lime) into a large bowl and beat using an electric hand whisk until just smooth and pale.</li> <li>Pour into the prepared cake tin and bake for 55-65 minutes until a skewer comes out clean when inserted into the middle of the cake.</li> <li>Make the icing by mixing together the icing sugar and zest and juice of the second lime, and ice when the cake is cool.</li> </ol>
