Ingredients

  • 1 onion, chopped

  • 1/2 tsp salt

  • 800g chopped tomato, plum

  • 1 red pepper, chopped

  • 2 courgette, thinly sliced

  • 2 celery stick, sliced

  • 1 green chilli, seeded and chopped

  • 1 tbsp dried oregano

  • 2 tsp ground cumin

  • 2 bay leaves

  • 2 cloves garlic, minced

  • 400g chickpeas

  • 2 carrot, sliced

  • 1 tsp chilli powder

  • 1 handful mushrooms

Method

  1. In a slow cooker, combine all ingredients.
  2. Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours.

Handy Hint

A pinch of sugar or dash of sweet chilli sauce will make it sweeter.

    This is a chilli recipe with lots of vegetables. Garnish with soured cream and grated Cheddar cheese, if wanted.
