450g chicken breast, or thighs. Chopped into bite-size pieces
1 tin sweetcorn, drained, or you can use frozen
1 jar salsa
1 tin black beans, drained and rinsed
- Put half the jar of salsa in the bottom of the slow cooker.
- Put the chicken on top of the salsa.
- Put the sweetcorn and black beans and the remaining salsa on top of the chicken.
- Cook on low for 6-7 hours, or high for 3-4 hours. Serve with rice.
Spice it up with hot sauce if you like. Can also be cooked on the stove top - just brown meat first and add the rest after all in the same pan. Serve with grated cheese on top.
