  • 225g self-raising flour

  • 225g caster sugar

  • 3 tbsp milk

  • 2 tsp baking powder

  • 4 eggs

  • 55g ground almonds

  • 150g raspberries

  • 1 oranges, zested

  • 225g butter


  1. Heat oven to 180C.
  2. Tip flour, baking powder, butter, eggs, caster sugar, milk, and ground almonds into a large bowl and whisk until smooth.
  3. Fold in the raspberries and mix with a spoon.
  4. Divide the batter between 12 paper muffin cases and bake for 20-25 minutes until golden and just firm.
