  • 125g self-raising flour

  • 225g icing sugar

  • 1 tsp cinnamon

  • 125g soft brown sugar

  • 25g desiccated coconut

  • 100ml sunflower oil

  • 2 eggs

  • 125g carrot finely grated

  • 50g butter

  • 25g walnuts chopped

  • 1 tsp lemon juice

  • 1 pinch salt

  • 50g soft cheese full fat


  1. Preheat the oven to 180C/Gas Mark 4.
  2. Sieve the flour, salt and cinnamon into a bowl.
  3. Stir in the brown sugar.
  4. Add the eggs and oil and mix well.
  5. Stir in the carrot, coconut and walnuts.
  6. Pour the mixture into a greased 8 inch tin and bake at for 30-35 minutes until firm to touch.
  7. For the icing, beat all the ingredients together until fluffy and creamy. Decorate the carrot cake with icing and walnut halves.

    When do you add the butter?

    Very nice but only makes a small cake, as you would expect from a 2 egg mix.

    This cake has a really nice flavour and texture. Quantities are very small though and in an 8" tin this makes a very flat cake.
