Healthy chickpea and feta salad

  • 1/2 onion chopped

  • 1 tbsp olive oil

  • 1 tomato chopped

  • 1 red pepper crushed

  • 50g goat's cheese low-fat, or feta

  • 3 cloves garlic grated or crushed

  • 1 pinch oregano

  • 1 handful fresh coriander chopped

  • 350g chickpeas


<ol> <li>Drain and place the chickpeas in a bowl.</li> <li>Add the chopped onions, tomato and coriander.</li> <li>Heat the olive oil, add the garlic and and the crushed red pepper. Roast on low heat for 3-4 minutes until you get the aroma.</li> <li>Crumble the feta in your hands into bits and add to the chickpeas.</li> <li>Finally add the garlic flavoured olive oil and mix with a bit of oregano (optional).</li> </ol>

Handy Hint

<p>This salad is great as a quick fix lunch on its own or as a filling for pita bread with some chopped green and red bell peppers. <br />Add a squeeze of freshly squeezed lemon juice, if you like and you also prepare it in advance.</p>
