Healthy chickpea and feta salad

  • 1/2 onion, chopped

  • 1 tbsp olive oil

  • 1 tomato, chopped

  • 1 red pepper, crushed

  • 50g goat's cheese, low-fat, or feta

  • 3 cloves garlic, grated or crushed

  • 1 pinch oregano

  • 1 handful fresh coriander, chopped

  • 350g chickpeas


  1. Drain and place the chickpeas in a bowl.
  2. Add the chopped onions, tomato and coriander.
  3. Heat the olive oil, add the garlic and and the crushed red pepper. Roast on low heat for 3-4 minutes until you get the aroma.
  4. Crumble the feta in your hands into bits and add to the chickpeas.
  5. Finally add the garlic flavoured olive oil and mix with a bit of oregano (optional).

Handy Hint

This salad is great as a quick fix lunch on its own or as a filling for pita bread with some chopped green and red bell peppers.
Add a squeeze of freshly squeezed lemon juice, if you like and you also prepare it in advance.
