  • 1/4 onion

  • 1 pinch salt

  • 1 pint vegetable stock

  • 1 tsp parsley chopped

  • 1/2 celery stick

  • 1/8 leek

  • 340g frozen peas (or use fresh)

  • 2 potatoes peeled (medium)

  • 1 pinch white pepper


1.Roughly chop onions, leeks, celery and potatoes.
2.Put into a saucepan with peas add stock, salt(optional), pepper and parsley and bring to boil.
3.Simmer until all are tender. Using hand blender or blender/liquidiser now process until smooth. Taste and add more seasoning or liquid if needed. Serve with homemade crusty bread.

Handy Hint

The quicker you need the soup, the smaller the vegetables should to be cut.
Add chopped mint instead of parsley for a refreshing change.
If you like a creamier soup add 2 floz of whole milk at stage 3. (this will add a fat content)
