Ingredients

  • 350ml onion, peeled and chopped

  • 1 tbsp tomato puree, levelled

  • 1 tbsp oil

  • 500ml vegetable stock

  • 2 tsp medium curry powder

  • 1 red pepper, de-seeded and sliced

  • 225ml red lentils

  • 2 cloves garlic, peeled and crushed

  • 1 tbsp fresh coriander

  • 1 tin chickpeas, drained

  • 2 small carrots, peeled and chopped

  • 450g natural yoghurt

Method

  1. Fry the onion, pepper and carrot in oil for 5 minutes until softened.
  2. Add the garlic and curry powder and fry for one minute more.
  3. Add the rest of the ingredients except the chickpeas and yogurt. Cover and cook for 25 minutes.
  4. Add the chickpeas and cook for 10 minutes more. Serve with yogurt, chopped fresh coriander and bread if liked.
