6 tbsp ready-made tomato pasta sauce
195 g vegetarian mozzarella
6 eggs, beaten
150 g mushrooms
- Fry sliced mushrooms in olive oil for 4 minutes - set aside.
- Fry the beaten eggs for a few minutes in olive oil, keep pushing the raw egg into gaps at edges of frying pan.
- When one side is golden brown, place the frying pan under your grill until the top looks “set”.
- Spoon on tomato sauce, mushroom and cheese and grill for another minute or so, then serve.
