Ingredients

  • 6 tbsp ready-made tomato pasta sauce

  • 195g vegetarian mozzarella

  • 6 eggs beaten

  • 150g mushrooms

Method

<ol> <li>Fry sliced mushrooms in olive oil for 4 minutes - set aside.</li> <li>Fry the beaten eggs for a few minutes in olive oil, keep pushing the raw egg into gaps at edges of frying pan.</li> <li>When one side is golden brown, place the frying pan under your grill until the top looks &ldquo;set&rdquo;.</li> <li>Spoon on tomato sauce, mushroom and cheese and grill for another minute or so, then serve.</li> </ol>
