Lamb and Wenslydale crumble

Ingredients

  • 1 onion

  • 2 tbsp oil

  • 1 carrot, finely chopped

  • 150g plain flour, plus 1 tbsp extra

  • 75g butter, diced, at room temperature

  • 75g Wensleydale cheese

  • 1 tbsp Worcestershire sauce

  • 1 tbsp mint, chopped

  • 450ml lamb stock, hot

  • 450g minced lamb

Method

  1. Pre heat oven to 180C.
  2. Heat oil and fry onion for 5-10 minutes.
  3. Add carrot and mince and cook, stirring occasionally until browned (about 20 minutes).
  4. Put flour, butter and pinch of salt in a bowl and rub together until crumbly.
  5. Add half of cheese and stir together.
  6. Add mint and 1 tbsp of flour to the mince.
  7. Bring to a simmer, then transfer to a greased baking dish.
  8. Spoon crumble over and top with remaining cheese.
  9. Bake for 20-30 minutes.
