Ingredients

  • 4oz self-raising flour

  • 1 tsp vanilla extract

  • 4oz caster sugar

  • 4oz soft butter

  • 2 eggs

  • 1/3 jars lemon curd

Method

  1. Cream sugar and butter together, add the eggs, sieved flour and vanilla extract.
  2. Tip into microwave baking dish.
  3. Microwave on high for 4 mins.
  4. Microwave lemon curd on high for 30 secs until melted.
  5. Turn out pudding drizzle with lemon sauce and serve with ice cream.
