Steamed white fish with ginger and spring onion sauce

  • 2 tsp sugar

  • 1 spring onion chopped into half inch pieces, using mainly the white part

  • 4 tbsp chicken stock

  • 1/4 tsp sesame oil

  • 3 tbsp fresh ginger julienned

  • 3 tbsp rice wine

  • 3 tbsp peanut oil

  • 1 tbsp oyster sauce

  • 1 clove garlic crushed

  • 3 tbsp light soy sauce

  • 2 white fish fillets like sea bass

  • 1 pinch white pepper


<ol> <li>Steam the fish for 7-11 minutes, depending on size.</li> <li>Meanwhile, heat the peanut oil in a saucepan, add the garlic and fry for 20-30 seconds until fragrant (but not brown).</li> <li>Add the rest of the ingredients, including the pinch of white pepper.</li> <li>Reduce the heat and simmer for about 2 minutes.</li> <li>Serve.</li> </ol>

    Love this, I&#39;m on it tonight with rice noodles and mange tout!

    This is lovely served with pak choi and rice or noodles. You could make this with less oil to make it even healthier.
