Steamed white fish with ginger and spring onion sauce

Ingredients

  • 2 tsp sugar

  • 1 spring onion, chopped into half inch pieces, using mainly the white part

  • 4 tbsp chicken stock

  • 1/4 tsp sesame oil

  • 3 tbsp fresh ginger, julienned

  • 3 tbsp rice wine

  • 3 tbsp peanut oil

  • 1 tbsp oyster sauce

  • 1 clove garlic, crushed

  • 3 tbsp light soy sauce

  • 2 white fish fillets, like sea bass

  • 1 pinch white pepper

Method

  1. Steam the fish for 7-11 minutes, depending on size.
  2. Meanwhile, heat the peanut oil in a saucepan, add the garlic and fry for 20-30 seconds until fragrant (but not brown).
  3. Add the rest of the ingredients, including the pinch of white pepper.
  4. Reduce the heat and simmer for about 2 minutes.
  5. Serve.

    Love this, I'm on it tonight with rice noodles and mange tout!

    This is lovely served with pak choi and rice or noodles. You could make this with less oil to make it even healthier.
