  • 150ml chicken stock

  • 1 large onion chopped

  • 1 small leek chopped

  • 6 free range chicken legs/thighs

  • 2 medium potatoes sliced thinly

  • 2 carrot roughly chopped

  • 0.5 bottle of white wine

  • 1 red chilli de-seeded and finely chopped

  • 1 bulb fennel chopped

  • 1 bunch thyme twigs tied with string


<ol> <li>Layer the potato slices in the bottom of the slow cooker.</li> <li>Brown chicken in a separate pan, with the garlic and onion.</li> <li>Add the chicken pieces on top of the layered potatoes and stuff the chilli and thyme in around them.</li> <li>Mix the rest of the vegetables together then place on top of the chicken.</li> <li>Drain any excess fat from the pan then de-glaze it with the white wine, scraping up any caramelised chicken from the bottom.</li> <li>Pour the wine mixture into the slow cooker and top up with the chicken stock</li> <li>Cook on high for 2 hours, then switch to low for 4 hours, or longer.</li> </ol>
