Ingredients

  • 236ml olive oil

  • 2 tsp sugar

  • 6 tomato, peeled and chopped

  • 236ml red wine vinegar

  • 1 red onion, finely chopped

  • 2 stalks celery, chopped

  • 2 tbsp freshly squeezed lemon juice

  • 1 tbsp fresh parsley, chopped

  • 1 clove garlic, minced

  • 1 sweet red or green bell pepper, seeded and chopped

  • 1 cucumber, peeled, seeded and chopped

  • 6 drops tabasco, (or more, to taste)

  • 1l tomato juice

  • 1 tsp Worcestershire sauce, (omit for vegetarian option)

  • 2 tbsp fresh chives, chopped

Method

  1. Combine all the ingredients.
  2. Blend to the desired consistency.
  3. Place in a container (a plastic milk container is great for this).
  4. Cover tightly and refrigerate overnight, allowing flavours to blend.
  5. Serve cold.

Handy Hint

Actually, on reflection, you could just serve it in a tall glass with vodka. :)
