Easy roast chicken pieces

  • 1.5kg chicken (thighs work well, or use whatever you have)

  • 250ml stock (or wine if available)

  • 150g pancetta or streaky bacon diced

  • 1 sprig rosemary

  • 4 sprigs thyme

  • 10 shallots peeled

  • 500g waxy potatoes cut into chunks

  • 1 tsp dried chilli flakes


<ol> <li>Preheat the oven to 220C/200C fan/Gas Mark 8.</li> <li>Put the chicken pieces in a large roasting tin and scatter with the pancetta, shallots, potatoes, thyme, rosemary and chilli flakes.</li> <li>Season with salt and ground black pepper. Spray/drizzle the olive oil and roast for 20 minutes.</li> <li>Add the stock/wine to the tin and cook for another 20–25 minutes until the chicken is golden and tender.</li> </ol>

Handy Hint

<p>You dont need to make gravy with this. The juices are unbelivably tasty.</p>

    Can't remember where I first found this, might have been a waitrose recioe card from yonks ago.

    This was really tasty. You can do it without the chili flakes, (it added a tiny bit of heat) and it's just as nice, but my nephews guzzled it up without a murmur.
