150ml double cream (or creme fraiche)
1 lemon zested and juiced
200g salmon cooked and flaked into bite sized pieces
- Cook the salmon - add a tablespoon of oil or a knob of butter to a pan and fry for about 10 mins turning once.
- Cook the pasta according to the packet instructions and drain keeping a little of the cooking liquid (approx two tablespoons)
- Mix the cooking liquid together with the cream and the lemon juice and zest.
- Season and transfer to a warm dish to serve.
You could use smoked salmon instead
