Ingredients

  • 1 red pepper, sliced

  • 1 handful capers

  • 2 handfuls cherry tomatoes

  • 1 clove garlic, whole, in skins

  • 1 pinch thyme, fresh or dried

  • 1 cod fillet , or any other white fish - haddock, bass, bream etc

  • 1 tin of anchovies

  • 1 bag new potatoes, halved or whole depending on how small they are

  • 1 handful black olives, pitted

Method

  1. Preheat oven to about 180C.
  2. Chuck all the ingredients (except the cod fillet) into a baking tray and drizzle with olive oil. Sprinkle with salt & pepper. Put in the oven to roast.
  3. Check on it a couple of times and stir all the ingredients around so everything cooks evenly.
  4. After about 40 minutes, place the fish fillet on top of the ingredients and cover the tray with foil. Cook for a further 15-20 mins (depending on size of fillet).
  5. Serve with a rocket salad and crusty bread to mop up the delicious juices.

    Great recipe; absolutely delicous & incredibly easy. A great rustic sort of meal to share - served as suggested with the salad & bread. Will be making this more!

    Yum - so easy but the end result seems much more complex. Will def do it again.

    Sooooo easy. All preparation (the little there is) can be done in advance, and then all you have to do is put in the oven, and tend occasionally. Virtually effortless if you are entertaining. Could use chicken instead of fish as well.
