  • 125g self-raising flour

  • 250g caster sugar

  • 125g soft margarine (or softened butter)

  • 2 eggs

  • 1 handful cherries or any other fruit your children like - sultanas, apricots, etc.


<ol> <li>Line a 20cm square cake tin with baking paper and heat the oven to 180C/Gas Mark 5.</li> <li>Cream the butter and the sugar.</li> <li>Beat the eggs. Slowly add the eggs and flour alternately, beating well.</li> <li>Add the chopped fruit and mix.</li> <li>Pour the mixture into the baking tin. Sprinkle the top with a little granulated brown sugar.</li> <li>Bake for around 20 minutes or until golden brown on top and firm to the touch. Cool and cut into squares for a lunchtime treat.</li> </ol>

    This is a great receipe, it can also be frozen which means you can make it in advance.

    my boys' favourite home-made cake. Very easy to make and they love helping chop the cherries and apricots.
