  • 450g brown sugar

  • 115g golden syrup

  • 85g unsalted butter

  • 115g black treacle

  • 1 tsp white wine vinegar

  • 140ml water


<ol> <li>Grease an 8-inch square tin with a little butter. Fill a jug with cold water and have it next to your hob or cooker top.</li> <li>Place all the ingredients into a large (ideally stainless steel) saucepan.</li> <li>Heat gently until the butter has melted, and then turn up the heat and bring the mixture to the boil as fast as you can.</li> <li>Boil, covered for two minutes. Then stir regularly, maintaining a fast boil, to thicken the toffee. Test a drop of the mixture in the cold water - when it is ready, the drop will harden and solidify immediately.</li> <li>Remove the pan from the heat, and quickly place the bottom in a large bowl of water or water in the sink to stop it cooking further.</li> <li>Pour the toffee into the prepared tin and cool.</li> <li>Break into pieces before serving.</li> </ol>

Handy Hint

<p>Store any leftovers (!) in an airtight tin.</p>
