Triple chocolate and peanut butter cookies

  • 100g self-raising flour

  • 1/2 tsp vanilla extract

  • 100g white chocolate

  • 100g milk chocolate

  • 100g peanut butter (crunchy works best)

  • 100g light muscovado sugar

  • 300g plain chocolate

  • 1 medium eggs

  • 85g butter at room temperature


<ol> <li>Preheat oven to 180C/Gas Mark 4.</li> <li>Chop 200g of plain, the milk and white choc into rough irregular chunks (try not to eat too much) and keep separate.</li> <li>Break remaining chocolate into a heatproof bowl and melt.</li> <li>Stir the chocolate until melted and add sugar, butter, peanut butter, egg and vanilla extract, beat until well mixed.</li> <li>Stir in the flour all of the milk and white chocolate and half the remaining plain chocolate.</li> <li>The mixture will feel quite soft and drop easily from the spoon.</li> <li>Drop big spoonfuls in 12 piles, onto 2 or 3 baking sheets (you may need to cook in batches)</li> <li>Stick the remaining chunks into the cookies (2 or 3 in each).</li> <li>Bake for 10-12 minutes until the cookies are very slightly darker around the edges, the smell will let you know they are ready.</li> <li>They will firm up as they cool.</li> </ol>
