  • 1/2 onion finely sliced

  • 1 tbsp oil

  • 1 pinch ground cinnamon

  • 1 pinch ground cumin

  • 1 small chicken breast cut into cubes

  • 4 handfuls dried apricots diced

  • 230ml water or unsalted chicken or vegetable stock


  1. Fry the onion in the oil until soft.
  2. Add the chicken, stock (or water), spices and apricots.
  3. Simmer for 10-15 minutes or until chicken is cooked.
  4. Puree to desired consistency.
