Bacon, leek and garlic cheese pasta

Ingredients

  • 8 slices bacon

  • 2 leek, washed and sliced into rounds

  • 400g pasta, penne or similar

  • 150g garlic and herb cream cheese, Boursin works well

Method

  1. Start boiling pasta.
  2. Heat some olive oil in a pan, when hot add leeks.
  3. Cut bacon into strips and add to leeks.
  4. Fry, stirring regularly until leeks softened and bacon cooked through.
  5. Lower heat and stir in soft cheese.
  6. Drain the cooked pasta, stir into mix and heat through and serve.

Handy Hint

Add other veg (cooked peas?) to up the 5-a-day quotient.

    This is a fabulous recipe! I used chicken instead of bacon and then added a bit of grated cheese on the top and chucked it in the oven to brown (only because i had the time!) and it was absolutely DELISH! Highly recommended for a quick lovely pasta dish. :) DD wasn't keen tho but she's not a fan of meat.
