Ingredients

  • 1/2 red pepper, roughly chopped

  • 115ml pineapple juice

  • 1 splash maple syrup, (optional)

  • 2 salmon pieces

  • 6 florets of broccoli

  • 4 tinned pineapple rings

  • 2 onions

  • 1 small sweet potato, or 4 carrots

  • 1 tbsp butter

Method

  1. Start by frying your salmon with the onions in the knob of butter.
  2. Break up the salmon as it's cooking to make sure there are no pink bits.
  3. Once it's half cooked, add the red pepper.
  4. Add your maple syrup to the salmon at this point if you would like.
  5. Steam your sweet potato (or carrots) and broccoli. If you don't like broccoli you can change it for anything green - courgette or spinach are great.
  6. Once all is cooked put everything together and use a hand blender or blender to blitz.
  7. At this stage add the pineapple rings and the juice for moisture.

Handy Hint

Don't cook the salmon on too high a heat - about medium heat.
For older kids you don't need to whizz it; you can make it up as a dinner. If you do that put the pineapple juice in with the salmon as it's cooking or take out completely.
