2 large courgettes, grated
1 tbsp butter or non-dairy spread
- Put the courgettes into a microwavable bowl.
- Add a knob of butter or non-dairy spread and a pinch of freshly ground black pepper.
- Cover the bowl then microwave on high for 4 minutes.
- Serve as is for toddler or older, or blitz to a puree for a baby.
All ages seem to love these, even those who proclaim to hate courgettes!
