Ingredients

  • 1 onion chopped

  • 1 tbsp olive oil

  • 4 chicken breast diced

  • 1 tin chopped tomato

  • 1 pepper red or green, chopped

  • 2 tsp honey

  • 1/2 tsp ground coriander

  • 1/2 tsp ground cumin

  • 1 tsp paprika

  • 1 tsp harissa paste to taste

  • 1/2 tsp dried mint

  • 1 handful flaked almonds if like

  • 1 clove garlic chopped finely

  • 1 handful fresh coriander to serve

  • 1 tin chickpeas

  • 1 handful dried apricots

  • 1 handful couscous to serve

  • 1 pitta breads to serve

  • 1 handful mushrooms chopped

Method

  1. Fry the chicken breasts gently in olive oil until browned.
  2. Add chopped onion, garlic, harissa and the other spices and herbs.
  3. Add peppers, mushrooms and chopped tomatoes.
  4. Add honey, apricots, chickpeas and almonds if using.
  5. Simmer on the stove top for around 20 minutes.
  6. Serve with lots of fresh coriander leaves, warm pitta bread and couscous.

    for some reason, this is showing 10/10 for children and 1/10 for adults. it should be the other way around!!

    Hot, spicey and warming one-pot meal with a lovely contrasting sweetness from apricots and honey. This makes a wonderful one-pot vegetarian meal if you simply omit the chicken and use extra mushrooms etc or some chopped courgette. The flavours intensify if you make it the day before.
