Ingredients

  • 1 onion medium, chopped

  • 2 tbsp flour

  • 1 tin chopped tomato

  • 500g minced beef 90% lean

  • 1 clove garlic minced

  • 6 potatoes medium; unpeeled, sliced

  • 1 tin kidney beans

Method

<ol> <li>In a heavy-based frying pan over medium-high heat, brown minced beef, rinse with hot water and drain.</li> <li>Mix flour into diced tomatoes, stir until flour is smooth.</li> <li>Layer into slow cooker in the following order: onion, beef, potatoes, garlic and beans.</li> <li>Pour tomatoes over all and sprinkle with salt and pepper.</li> <li>Cover and cook on low for 5 to 6 hours or until potatoes are tender.</li> </ol>
