Ingredients

  • 175g self-raising flour

  • 150g caster sugar

  • 3 eggs

  • 2 lemons (or oranges)

  • 250g ricotta

  • 50g butter softened

Method

  1. Separate the eggs and whisk the egg whites until stiff.
  2. In another bowl mix the butter, sugar, egg yolks and lemon/orange rind then beat in the ricotta a spoonful at a time.
  3. Sift the flour into the mixture, fold it then fold in the egg whites.
  4. Bake at 180 for 45-50 minutes.

Handy Hint

Decorate either by letting it cool then icing it or you can put a mix of white and dark chocolate drops on top when it come out of the oven - they melt and you can make nice swirly patterns with a teaspoon.This makes enough for a 20cm cake tin. You can make it a day or two in advance and it stays nice & moist, it also freezes well.

    I got this recipe from an Observer supplement but reduced the sugar content as it was revoltingly sweet with the 300g the original recipe stated.
