  • 1.1kg brown sugar

  • 2 tsp salt

  • 1 tsp cayenne pepper paprika or chilli powder also works well

  • 1/2 tsp pepper

  • 1.8kg courgette chopped

  • 1l malt vinegar

  • 1 knob fresh ginger peeled and finely chopped

  • 1.1kg tomatoes roughly chopped

  • 2-3 bulbs garlic peeled and crushed or chopped

  • 1.1kg onions peeled and chopped


<ol> <li>Place all the chopped veg, vinegar, sugar and spices in a large pan and bring slowly to the boil, stirring now and again.</li> <li>Simmer for around two hours (don't forget to stir as it will stick) until thick.</li> <li>Pour into heated jars and seal.</li> </ol>

Handy Hint

<p>This tastes nice straight away but should really be left for at least three months to mature.</p>

    I make something very similar to this but add a tablespoon or so of curry paste too. (hot, medium or mild, whatever you like) It's always very popular.
