Ingredients

  • 2 tbsp brown sugar

  • 1 tsp salt

  • 2 tbsp vegetable oil

  • 3 large onion, thinly sliced and pushed out into rings

  • 680g lean cooked pork, thinly sliced into strips

  • 1/4 tsp cayenne pepper

  • 115g red pepper, (tinned, bottled or fresh)

  • 1/2 tsp paprika

  • 1 clove garlic, chopped

  • 3 tbsp Worcestershire sauce

  • 5 tbsp lemon juice

Method

  1. In a deep, heavy frying pan, heat the oil over moderate heat.
  2. When it is hot, add the onions and cook until lightly browned.
  3. Add the garlic and fry for a minute or two.
  4. Add all the remaining ingredients.
  5. Cover and cook for 10 minutes, stirring occasionally.
  6. Remove from the heat and serve with rice or mashed potato.
