  • 2 large baking potatoes

  • olive oil spray


<ol> <li>Preheat oven to 180°C.</li> <li>Bake the potatoes for 45-60 minutes.</li> <li>Carefully cut each skin into quarters - leave about 5mm of flesh on each one - you should now have four equal sized skins for each potato.</li> <li>Put these on a baking tray and spray with olive oil, bake for another 20 minutes or until golden brown.</li> <li>Serve with your choice of dip/salsa.</li> </ol>

Handy Hint

<p>These are great as a starter, snack or side dish. <br />They can also be adapted by adding grated cheese, bacon, chillies etc.</p>
