2 large baking potato
1 olive oil spray
- Preheat oven to 180C.
- Bake the potatoes for 45-60 minutes.
- Carefully cut each skin into quarters - leave about 5mm of flesh on each one - you should now have four equal sized skins for each potato.
- Put these on a baking tray and spray with olive oil, bake for another 20 minutes or until golden brown.
- Serve with your choice of dip/salsa.
These are great as a starter, snack or side dish.
They can also be adapted by adding grated cheese, bacon, chillies etc.
Kids can help
