  • 1 onion

  • 235ml vegetable stock

  • 1 tsp turmeric

  • 1 large carrots diced

  • 2 tsp mild curry powder

  • 200g red lentils

  • 2 cloves garlic chopped

  • 1 bunch coriander to garnish


  1. Heat a little oil in a saucepan and fry off onions and garlic (2-3 minutes).
  2. Add the carrot. Stir for another couple of minutes.
  3. Add the lentils, curry powder and turmeric. Stir for 1 minute.
  4. Cover with stock. Bring to the boil, then simmer gently for about 15 minutes, or until lentils have softened. Stir regularly to prevent sticking.
  5. Garnish with coriander.

Handy Hint

Serve with either naan bread or rice.
