  • 250g self-raising flour

  • 1 tsp vanilla essence

  • 1 pinch salt

  • 150g golden caster sugar

  • 150g natural yoghurt

  • 2 large eggs

  • 2 oranges

  • 150g butter


<ol> <li>Grease and line a spring bottomed round cake tin.</li> <li>Melt and cool the butter.</li> <li>Juice and grate the zest of 1 orange. Mix the juice with one tbsp of the sugar. Set aside.</li> <li>In a large bowl, combine the butter, orange zest, sugar, yoghurt, vanilla, flour, salt and egg. Beat with a wooden spoon for one minute.</li> <li>Pour the mixture into the tin. Slice the remaining orange and arrange the slices on top of the cake mixture.</li> <li>Bake for 1 hour in a 170 C oven until the cake is soft and springy.</li> <li>Remove from oven, leave to cool in the tin and then spoon the orange juice mixture over the cake.</li> </ol>

    This is really delicious and moist. If you like, you can make it with a mixture of lemon and lime, instead of orange. I've even made it with a lemon flavoured yoghurt when I didn't have any natural in the fridge.
