Ingredients

  • 1 yellow pepper

  • 2 tins chopped tomato

  • 1 red onion large

  • 1 tsp dried tarragon

  • 1 red pepper

  • 330ml cider

  • 2 sweet potatoes large

  • 2 carrot large

  • 4 gammon steaks large

Method

<ol> <li>Clean and prepare veg. Slice onions, carrots and sweet potatoes and chop peppers. Put into slow cooker.</li> <li>Cut any fat off gammon, chop into chunks. Add to pot.</li> <li>Pour over tinned tomatoes, cider and tarragon.</li> <li>Stir together. Add pepper if you want but no salt as the gammon is usually salty enough.</li> <li>Cook for 4-6 hours.</li> </ol>

Handy Hint

<p>If your kids are reluctant veggie eaters, grate the carrot and sweet potato before adding. <br />They'll never know they are eating them. <br />Also, you can replace the cider with a stock cube dissolved in 500ml of boiling water.</p>

    My kids love this served with giant baked potatoes, but it's just as good with rice or pasta. I always put some of it into a plastic tub and take it to my elderly in-laws-I have converted them to sweet potatoes! It's an economical and tasty dish that the whole family enjoys.
