Easy peasy chicken casserole

Ingredients

  • 1 onion

  • 4 chicken breast, or skinless legs

  • 1/2 pints chicken stock

  • 4 celery stick

  • 2 cloves garlic

  • 4 potatoes, big ones

  • 2 leeks

  • 4 carrot

  • 1 pinch fresh mixed herbs

  • 250ml white wine

Method

  1. Preheat oven to 200C.
  2. Fry chicken breasts or legs in little olive oil to seal and brown (about 5 mins) using flame-proof casserole dish with lid.
  3. Add chopped onion and garlic, then rest of veggies (all peeled and chopped).
  4. Add stock, wine and herbs then season to taste.
  5. Bring to the boil.
  6. Bake in oven for 30 mins (if using breast) or 40 mins if using leg.
  7. Serve with mash and green veggies - my kids love it!

Handy Hint

Use more wine if it is designed for adults. Get your butcher to bone the legs to reduce the cooking time

    It's got potatoes in it so i'm not serving it with mash, thank you very much.

    It is delicious but does take about an hour longer in the oven then stated, worth it though.

    Always a winner! Very easy to make and very low fat too (only 3 weight watchers points)I can whip it up in 20 mins - including all the veg chopping time.
