  • 2 tbsp vegetable oil

  • 340ml vegetable stock

  • 2 chicken breast

  • 1 tbsp curry powder

  • 1 knob ginger peeled and finely chopped (a medium cube)

  • 2 red onion chopped

  • 4 slices bacon chopped

  • 170g rice

  • 2 cloves garlic finely chopped

  • 110g frozen peas


<ol> <li>Heat the oil in a saucepan and add the garlic, ginger and curry powder.</li> <li>Cook for 1 minute over a medium heat.</li> <li>Add the chicken pieces to the pan and cook for 4 minutes on each side.</li> <li>Add the bacon and leek to the pan and cook for 2 minutes, stirring all the time.</li> <li>Add the rice and stir to coat it with the oil, then add the stock.</li> <li>Cover and simmer for 20 minutes, adding more stock if the rice gets too dry.</li> <li>Add the peas and cook for a further two minutes until the peas are warmed through.</li> <li>Serve.</li> </ol>
