Wok-fried turkey or chicken with peppers

Ingredients

  • 1 tsp caster sugar

  • 3 tbsp vegetable oil

  • 1 red pepper

  • 300g minced turkey, or chicken

  • 1 tbsp chilli bean sauce, or your own chilli sauce to taste

  • 3 tbsp soy sauce

  • 2 cloves garlic, crushed

  • 1 tsp cornflour

  • 500g Greek yoghurt

  • 2 tbsp chinese rice wine, or dry sherry

Method

  1. Chop the peppers and beans and blanche for 4 minutes. Leave to cool (put ice on for best effect).
  2. Add cornflour, sugar and soy sauce to pork mince and leave.
  3. Heat oil in wok, add garlic and fry veg until gently blackened. Remove.
  4. Add meat to the wok, fry quickly and brown for 4 minutes.
  5. Add wine and chilli sauce and a splash of water.
  6. Return veg to pan.
  7. Serve with rice or noodles.

Handy Hint

Cheap, fast and very good on a sofa on your lap.
