  • 2 tbsp olive oil

  • 4 small carrot peeled and cut in half lengthways

  • 1 leek washed and cut into chunks

  • 3 small parsnip peeled and cut in half lengthways

  • 1 eating apple cut into quarters

  • 2 cloves garlic sliced

  • 4 pork chops or steaks

  • 16 small new potatoes cut into quarters

  • 4 slices lean dry cured smoked bacon (optional)


<ol> <li>Preheat the oven to 200C/Gas Mark 6.</li> <li>Take a rasher of bacon and wrap around each pork steak.</li> <li>Place all the remaining ingredients onto 1 large or 2 smaller baking trays and toss together to coat in oil.</li> <li>Spread out and arrange the ingredients in a single layer on the baking sheet.</li> <li>Add the pork on top of the vegetables.</li> <li>Place in the preheated oven for 25 minutes until the meat is tender and juices run clear, and then serve with additional seasonal green vegetables.</li> </ol>
