Leek, ham and stilton bake

  • 120ml double cream

  • 1 handful cheddar grated

  • 120ml dry white wine

  • 230g ham cooked and diced

  • 230g stilton crumbled

  • 2 leeks cleaned and finely sliced

  • 1 medium cauliflower chopped into florets (for topping)


<ol> <li>Preheat the oven to 180C/Gas Mark 4.</li> <li>Boil or steam the cauliflower and mash well with butter (and a dash of cream or cheese if required).</li> <li>Gently fry the leeks in butter and oil.</li> <li>Add wine to the leeks and allow to reduce and thicken.</li> <li>Add double cream, ham and stilton, allow the cheese to melt into the sauce.</li> <li>Transfer the leek and ham mixture to a lasagne-type dish, cover with the cauliflower topping.</li> <li>Bake until the topping is golden brown.</li> </ol>

Handy Hint

<p>The original recipe uses mashed celeriac but I think cauliflower works better as a topping here. I use Waitrose diced ham hock and any old blue cheese! Lovely served with steamed green vegetables.</p>
