Ingredients

  • 200g spaghetti, (or tagliatelli)

  • 4 slices bacon, cut into small strips or lardons

  • 2 large eggs

  • 50g Parmesan, grated

Method

  1. Put the pasta on to cook.
  2. Meanwhile, fry up the bacon.
  3. In a cup or bowl, beat the eggs and then mix through the grated cheese. Add salt and pepper to the mix.
  4. When the pasta is cooked, drain and return to the pan, but off the heat. Add the bacon and the egg/cheese mix.
  5. Stir thoroughly coating the pasta. This will cook the eggs.
  6. Serve with extra Parmesan if desired.

Handy Hint

Really quick! Add onion, mushrooms or garlic if desired.

    I scaled it up to serve 3 people. Worked really well.

    Having had many scrambled disasters, I agree the trick is to take it off the heat before adding the eggs (stir them in very quickly at this point). You think the eggs will stay raw but they don't. Another trick to ensure the sauce is not too thick is not to drain the spaghetti, but use tongs to get it out of pan and into the bacon mix. This brings with it enough starchy pasta water to glaze the sauce. Then take off heat and add eggs and parmesan. Lots of freshly ground black pepper finishes it off perfectly.
