  • 340g self-raising flour

  • 110g sugar

  • 2 tsp mixed spice

  • 1 eggs beaten

  • 280g mixed fruit

  • 300ml strong black tea


<ol> <li>Soak the fruit in the tea for about 30 minutes until the fruit has swollen up.</li> <li>Mix the dry ingredients, add the tea and fruit and the egg. Mix gently but don't over mix.</li> <li>Pour into a 2lb loaf tin and bake at 180C/Gas Mark 4 for about 60-80 minutes.</li> </ol>

Handy Hint

<p>Don't bother waiting for the tea to cool before pouring it over the fruit.</p>
