340 g self-raising flour
110 g sugar
2 tsp mixed spice
1 eggs, beaten
280 g mixed fruit
300 ml strong black tea
- Soak the fruit in the tea for about 30 minutes until the fruit has swollen up.
- Mix the dry ingredients, add the tea and fruit and the egg. Mix gently but don't over mix.
- Pour into a 2lb loaf tin and bake at 180C/Gas Mark 4 for about 60-80 minutes.
Don't bother waiting for the tea to cool before pouring it over the fruit.
